Vegan Banana Chocolate Chip Muffins

Seeing that we had several very ripe bananas in our kitchen, we got to baking muffins and loafs not to let them go to waste.  So, you’ll notice a few recipes all surrounding bananas these days.
These muffins are the best vegan recipe I’ve ever tried.  They originate from my favourite vegan cook and author, Jae Steele, from her book Get It Ripe (what a cute title, right!)  We baked a dozen yesterday, and aside from a few crumbs, there are no traces of them today.  They are that good.

  1. I just wanted to let you know that I tried these muffins last night and they were AWESOME. I did not add the chocolate chips but did add a teaspoon of vanilla extract and they turned out great 🙂

    • Fantastic, thank you! Yes, the muffins are also great without the chocolate chips, but I’m a chocolate lover, so I always add them if I have them. Vanilla, yum, sounds tasty!

I cannot describe how much I love these muffins.

Vegan baking at its best. No crazy weird ingredients, just delicious, moist, delicious muffins.

    Did I say delicious?

I also added a little vanilla paste. yummmmmmmmmmm.

    • Hehehe, they’re pretty awesome aren’t they? I’ve never had a better vegan muffin, and I’m not tooting my own horn, these are from the talented Jae Steele!
The vanilla paste must have been so delicious.

  3. Your muffins look superb. As you’ve seen my latest post I made a second version of bananas today and didn’t include enough baking powder. So I didn’t get the rise I was hoping for. Tasted great, though! Wolfed three of them before taking photos 🙂

  4. Thanks for your feedback on my blog, I appreciate it… even more as it gives me the opportunity to sneak into your world. I just read your recipe and guess what? I do have extra ripe bananas! So I might give it a try before my bananas are walking by themselves! 😉 It’s always great to meet people with a environmentally friendly view on this world.
