Fresh Veggie Wraps

I love these veggie wraps.  Not just because they are nutritious, but because they are so versatile.  You can use whichever veggies you currently have in your fridge.  You can also swap the bulgur for a gluten-free alternative, such as quinoa.  They are fresh and crunchy with a hint of creaminess from the hummus, and the best part, they make great portable leftovers while still keeping their crunch!

Fresh Veggie Wraps Recipe

Makes 4-5 wraps

Ingredients:

  • 2 carrots, washed and shredded
  • 2 lebanese cucumbers, washed and shredded
  • a handful of baby sunflower sprouts, washed
  • 2 cups spinach, washed, stems torn away
  • 2 roma tomatoes, washed and sliced in quarters
  • 3/4 cups dark coarse bulgur
  • 1 1/2 cups water
  • 2 cups green lentils
  • 1/2 cup red onion, sliced
  • 1 teaspoon coconut oil
  • 1 teaspoon ground cumin
  • a pinch of kosher sea salt
  • Store bought or homemade kamut round wraps (we used store bought here)

Directions:

  • Using a mandoline, carefully shred the carrots and cucumbers (watch your fingers!).  Set aside.
  • In a small saucepan, bring water to a boil.
  • Add bulgur, cover, and simmer for approximately 30 minutes, or until all liquid has been absorbed.
  • In a skillet over medium heat, heat the coconut oil.  Add red onion and sauté for 5 minutes.
  • Add cumin and lentils and cook for approximately 10 minutes.
  • Add the cooked bulgur, stir to combine and season with a pinch of sea salt.  Remove from heat and set aside.

Hummus Ingredients:

  • 2 cloves garlic, chopped
  • 3 tablespoons tahini
  • 2 tablespoons olive oil
  • juice of 1 lemon
  • 2 cups chickpeas, rinsed
  • a pinch of kosher sea salt

Directions:

  • In a food processor, add all ingredients and pulse for a few seconds until you have a smooth consistency.
  • Taste. If you would like to add some more lemon, go for it.
  • Place hummus in a bowl.

Hummus

Assembling the wraps:

  • Spread the wraps with hummus.
  • Add carrots, cucumbers, sprouts, tomatoes, and bulgur/lentil mix in rows.

Vegan Fresh Veggie Wraps

  • Fold the wrap, cut in half and serve.
  • Enjoy!
